PERSIAN RICE SL
Servings: 6 servings
2 tbl butter
1 cup orange juice
1 1/3 cup rice, uncooked
1 tbl fresh parsley, chopped
1 tsp salt
1/4 tsp orange rind, grated
3/4 cup raisins
1/4 cup slivered almonds, toasted
2 cup chicken broth
Directions: melt butter in a small dutch oven over medium heat. add rice; cook, stirring constantly, until rice is lightly browned. add next 4 ingredients; bring to a boil. reduce heat; cover and simmer 20 minutes. remove from heat; let stand 5 minutes. stir in remaining ingredients. yield: 6 to 8 servings.
